Ingredients
- 1/3 cup Laksa Paste (check the international food isle)
- 400ml can coconut milk
- 1 cup water
- 24 green prawns, peeled, tails intact
- 200g dried rice stick noodles
- 120g green beans, thickly sliced diagonally
- 80g bean sprouts, trimmed
- Fresh Thai basil to serve
- Lime wedges to serve
Method
- Heat a medium saucepan on medium heat
- Add Laksa paste and cook for 30 seconds
- Stir in coconut milk and water and simmer for 3 minutes
- Add prawns and cook for another 3 minutes
- Meanwhile, cook noodles (with packet directions) and drain
- Add noodles into serving bowls and pour over mixture
- Top with beans, sprouts, basil and squeeze over lime
