Ingredients
- 4 eggs
- ½ cup milk or cream (optional)
- Minced or finely chopped garlic
- Onion
- Diced cherry tomato
- ½ cup spinach
- Paprika (optional)
Method
- In a bowl whisk the milk and eggs until a consistent colour and texture
- Add the garlic, onion, tomato and spinach
- Mix until spinach is fully submerged
- Pour into pan with a splash of olive oil (or oil of choice)
- Cook until golden underneath (use spatula to check)
- Serve!
