Ingredients
- Vegetable oil
- 8 eggs
- ½ cup thickened cream
- 40g feta cheese or goats cheese
- 2 shallots (thinly sliced)
- ¼ cup chives (finely chopped)
- Salt and pepper
Method
- Preheat oven to 200°C and grease 8 small (1/2 cup) ovenproof dishes with vegetable oil
- Crack an egg into every dish
- Pour cream equally on top of all dishes
- Sprinkle with feta, shallots and chives
- Season with salt and pepper if desired
- Place dishes on baking tray in oven and bake for 10 minutes
- Serve with toast (not too crusty) if desired or simply eat with a spoon
